The Stillery's Ouwe Genever
The best Ouwe genever in Amsterdam. Our words, and we may be a little biased. The judges at the World Gin Awards 2021 went further: Best Dutch Genever. So there.
EY OUWE!
In Amsterdam, "Ey ouwe!" is what you shout when you spot an old pal, and sometimes your ouwe is just your dad. With genever, "old" refers not to the drinker but to the way it's made. Old method, not old people. Not the way grandpa drank it. Made for you.
RULES ARE RULES
Old-style genever must contain at least 15% malt wine. Spelt is our M.O., so we went for 27% spelt malt wine. Add juniper, Amarillo and Citra hops distillate for freshness, poppy seeds for body and almond distillate for warmth. Made in Amsterdam since July 2017.
To add fuel to the fire of confusion: we do age it, at least three and usually six months in ex-bourbon casks. Some casks sleep a little longer. That glimmer of green? An extra tincture of Citra hops.
IN THE TULIP GLASS
Nose: hops, a touch of aniseed and citrus. Palate: creamy, with vanilla, caramel and a little oak from the cask. Finish: soft and nutty, with a hint of almond.
THE AMSTERDAM WAY
Kopstootje ("little headbutt"): 35 ml Ouwe in a tulip glass, filled to the brim, with 330 ml cold hoppy pale ale on the side. First sip without lifting the glass: bend over, hands behind your back. Then beer, and the hops in the genever find the hops in the beer. We nip, we don't shoot.
Martinez, the grandfather of the martini: 45 ml Ouwe, 45 ml sweet vermouth, 5 ml maraschino liqueur, 2 dashes orange bitters. Stir on ice, strain into a chilled coupe, finish with orange zest.
