We have used organic local ingredients for this gin, each of which brings their own unique flavour over to The Stillery's Dutch North Sea Gin. Local but slightly different. Our Master Distiller, Pascal, selected algae growing in the Dutch North Sea such as Toothed Wrack and the invasive Japanese Wireweed.

This seaweed lays afloat on the water denying sunlight to the organisms living under it. Although this invasive species can be quite a pest, it does pack a punch when it comes to flavour. So yes, we distilled Japanese Wireweed and added it to our North Sea Gin. The Stillery is combating Japanese Wireweed one bottle of gin at a time.

We got the organic raspberry leaf, blackberry leaf, cleavers and sea buckthorn from the dunes. The combination gives the gin a very fresh taste. At the same time, none of the ingredients gets too much attention, which ensures that the North Sea gin has a very round pallet. This gin has one foot in the refreshing surf and the other in the dunes.

We prefer to drink this coastal delight in a The Stillery's Maritime Martini because it is so round and soft in taste. For the less boozy cocktail lover, there is of course always the Gin Tonic. The Mediterranean tonic from Fever Tree goes especially well with the Dutch North Sea Gin. Garnish the gin with the salty samphire or with berries from the dunes such as blackberries or raspberries.
