The Stillery Amsterdam Rye Whisky - PX Sherry Cask
Every morning on my way to the distillery I drive across Dam Square. And every morning, there she is: Lady Justice, on top of the Royal Palace, sword in one hand, scales in the other, looking out over Amsterdam. She has seen a lot come through this city. A fair bit of whisky, too.
SHE WEIGHS THEM ALL
That's why she's on our bottle. She weighs everything that calls itself whisky, and this is the one she picks as the real deal: 100% rye malt, distilled and matured in our own distillery in the Amsterdam harbour. A true Amsterdam whisky. Justice is served.
PATIENCE IS A VIRTUE
In Dutch we say "geduld is een schone zaak": patience is a fine thing. My mother says it all the time, it's written on the bottle, and we think that's beautiful. This rye waited three and a half years, first in cask in the harbour, then on Pedro Ximénez sherry casks for its dark, sweet side. Separating the wheat from the chaff is not an afternoon job.
CINNAMON, CHERRY AND MORE MARZIPAN
Nose: cinnamon, rye bread and dried stone fruit. Palate: dried apricot and peach, cherry, honey, almond and marzipan. Finish: long, with cinnamon and a little more marzipan.

THE BEST OF BOTH
We fill the casks by hand and the bottles on a machine, in small batches. And before it gets that far, there's a lot of handwork in it, and even more tasting. This release counts 993 bottles, each with its own number.
BIG BROTHER
Our first rye, the 2023 single cask, was named Best Dutch Single Cask Single Rye at the World Whiskies Awards 2023. It's gone. This is its successor: not a single cask, but the same 100% rye malt.
WHAT'S THE RUSH
Pour 35 ml neat, at room temperature, into a tumbler or tulip glass. Taste. Add a few drops of water and taste again. Looking for an everyday dram? Try our lightly peated Amsterdam Spelt Whisky.
